Try out this Cameroonian Jollof rice recipe




Jollof rice is a staple dish in many parts of Africa especially West Africa.

From Nigeria, Senegal to Liberia this pot of rice made up of tomatoes can be made in the twinkle of an eye.

Ingredients

2 cups or 500g Basmati rice, uncooked
1 medium or large onion
4 fresh tomatoes, coarsely blended or cubed
2 tbsp. tomato paste, heaped
A handful of green beans
2 large carrots, cut into any shape of choice
5 garlic cloves, finely chopped
1 tsp. thyme, dried or fresh
1 tsp. white pepper
1/2 cup vegetable oil
Salt to taste
Seasoning to taste
Scotch bonnet pepper (optional)

Preparation

Step 1: Heat oil and sauté garlic for 30 seconds. Then add onions and sauté. Add thyme and white pepper. If you are using Scotch bonnet pepper and any other spice add it now and stir for a minute.
Step 2: Add tomato paste and stir-fry for about 3 minutes, then add fresh tomatoes and stir-fry for 10 minutes on low heat or until tomatoes loses its sweet taste. Then you know your tomato is ready and you can proceed with the other ingredients.
Step 3: Add salt and seasoning cubes or powder. Add previously washed rice and add boiling water to the rice just enough to cover the rice.
Cover the pot and cook until water is almost dry.
Step 4: Now add your green beans and carrots, cover the pot with aluminium foil.
Enjoy with grilled chicken, fish or meat.
